Trail Drive Management Corp (TDMC) is the not-for-profit organization that manages the spectacular Dickies Arena, a 14,000-seat multipurpose venue located adjacent to the Will Rogers Memorial Center campus in Fort Worth, Texas. Owned by the City of Fort Worth, the state-of-the-art arena opened in November 2019 and hosts a variety of events, including concerts, sporting events, family entertainment, and Fort Worth Stock Show rodeo performances.
Job Summary:
Trail Drive Management Corp (TDMC) is looking for a full-time Restaurants and Clubs Manager. This position will oversee (1) full-service fine dining club/restaurant, (1) high-volume bar, and (2) elevated concessions concept. This role is pivotal in delivering world-class hospitality to premium account holders and nightly event guests. You will lead team onboarding, menu build and program execution, labor and budget management, and operational planning tailored to diverse event demographics. Working in close partnership with our in-house culinary team, you will ensure high-quality and memorable food and beverage experiences.
This position is 100% on-site.
Essential Job Functions:
- Lead the recruitment, onboarding, training, scheduling, and daily guidance of all club, restaurant, and bar team members (including supervisors and part-time staff)
- Drive event-based service standards and maintain high team engagement to ensure exceptional guest hospitality across all areas
- Oversee day-to-day and event-based operations across fine dining, high-volume bar, and elevated concession settings
- Build, update, and maintain POS systems, online reservation platforms, operational side-work, and event checklists
- Maintain strict adherence to TABC/alcohol service policies, safety, security, and health sanitation standards
- Partner with the Culinary team on menu development, food presentation, and product quality consistency
- Develop and execute seasonal or event-specific beverage promotions in collaboration with marketing teams and venue sponsors/partners
- Manage departmental payroll, inventory ordering, costing, and workforce management systems to meet financial targets
- Conduct regular reviews of sales, labor, and inventory and track against budgeted performance
- Perform other duties as assigned
Qualifications:
- Must be a minimum of 21 years of age
- 3+ years of experience in food and beverage operations, with 2+ years in a supervisory or management capacity
- Proficiency in POS management, online reservations, workforce management systems, and MS Office (especially Excel)
- Strong financial experience (labor, inventory, product ordering, and costing)
- Excellent written, verbal, and radio communication skills in fast-paced, high-pressure environments
- Ability to work extended shifts (10+ hours), nights, weekends, and holidays aligned with the arena event schedule
- Ability to sample and evaluate food and beverage quality
- Preferred experience in sports/entertainment venues, arenas, or multi-concept dining operations (fine dining, fast casual, and high-volume beverage)
- Preferred experience leading large teams of 60+ employees
- Ability to work a flexible schedule including – nights, weekends, and holidays.
- Able to communicate effectively with management, guests, and team members.
- Ability to handle multiple tasks in a fast-paced, high-energy environment.
Working Conditions:
- Employees will work in an environment with fluctuating temperatures
- Employees must have the ability to lift, push, and pull up to 50 lbs, and sporadically assist with 100 lbs or more as the situation requires
- Employees will regularly spend their shift standing/walking, traveling stairs, reaching, lifting, stooping, and bending with limited to no sitting
- Employees may be exposed to high noise levels and/or fluctuating lights in event settings
- Employees may be exposed to sharp objects, machines with moving parts, heat from ovens, burners, steam, trays, etc.
- Employees must have the ability to reach, lift, and bend to perform job duties throughout the shift
- Employees may be exposed to hazards associated with moving vehicles and require strict adherence to safety protocols.
